One Of The Best Brunch Spots You’ll Find In North Carolina
Seasonal Pumpkin Marshmallow Beignets At Ruby Sunshine In Charlotte, North Carolina. It's our vote for one of the best brunch spots you'll find in North Carolina
I’ve been wanting to try this relatively new brunch spot ever since it opened a new location a few months ago. And, I deem it one of the best brunch spots you’ll find in North Carolina. It’s Ruby Sunshine’s newest location on Johnston Road in Ballantyne. Conveniently located near I-485 in Charlotte, I pass by Ruby Sunshine every day. And, I finally had a chance to try it.
What Is Ruby Sunshine?
If memory serves me correctly, the spot that houses the current Ruby Sunshine used to be a Mexican restaurant. But, when you step inside, it’s unrecognizable as it once was. It has a completely new look. And, they bill themselves as “crazy about brunch.” The menu describes the concept as born out of an undeniable spirit and soul of New Orleans. And, when they say they celebrate brunch every day, they mean it. I was blown away.
The Beignets
Of course, when you visit a spot that highlights the spirit and soul of New Orleans, you must try the signature Beignets. In fact, the waitress alerted us to the seasonal special Pumpkin Marshmallow Beignets. And, I’m sooooo glad she did. They were outstanding. They arrived as four good sized New Orleans-style beignets with pumpkin cheesecake, praline sauce, marshmallow creme topped with spiced candied pecans and powdered sugar. The beignets were warm and crispy, sugary doughnuts that were soft and fluffy on the inside. And, the pumpkin cheesecake underneath was worth digging into! It wasn’t overpowering pumpkin, just enough. And, there’s the marshmallow creme on top with the praline sauce. All I can say is, “wow.”
The Bayou Shrimp Bennie
My husband ordered the Bayou Shrimp Bennie. It was fantastic. It arrived as shrimp in pork tasso and Creole tomato sauce. The sauce was amazing. There were two poached eggs and fried green tomatoes on a buttermilk biscuit to complete this delicious dish.
Biscuits and Gravy With Sweet Heat Fried Chicken
I decided I wanted a little sample of everything. So, I got the Biscuits and Gravy. It was fluffy biscuits in fantastic sausage gravy with eggs and smoky applewood bacon. I decided to add fried chicken in the sweet heat hot honey sauce. I couldn’t stop eating. It was the perfect mix of salty, sweet and spicy. I did bring some of the biscuits and chicken home! It’s a lot. But, it’s so good.
Give Ruby Sunshine a try. Check their website for locations and hours. And, see for yourself why it’s one of the best brunch spots you’ll find in North Carolina!

4 Of The Country's Most Delicious Brunch Spots Are In South Carolina
Mother’s Day is fast approaching (friendly reminder to start that shopping if you haven’t yet!). It’s also the perfect day to treat mom to brunch. As a millennial brunch is one of my favorite meals in existence, and I will always be down to go. But if you’re treating mom to brunch then you want to make sure you are taking her to the absolute best- she deserves nothing but perfection. So where is that spot? Well according to the latest rankings from YELP South Carolina is home to 4 of the country’s top places for brunch. And two are in North Carolina! 6 out of 100 isn’t bad at all. The bad news, only one spot is local to the Charlotte area. The others require a little more time and perhaps a hotel stay. But I’m sure Mom would love a trip too!
So where did these rankings come from? Here’s exactly what YELP had to say: “This is an all-time list of the best brunch spots for Mother’s Day according to Yelp. We identified businesses in the Breakfast & Brunch category with a large concentration of reviews mentioning “brunch,” then ranked those spots using a number of factors including the total volume and ratings of reviews mentioning “brunch.” If a chain appeared on the list more than once, we only included the highest-rated location. We included only 10 businesses per state for geographic diversity. All businesses were marked open on Yelp as of April 6, 2023. When available, all businesses on this list have a passing health score as of April 6, 2023.”
